Filipino Pandesal

Pandesal 

Ingredients: 

All purpose flour 6 3/4 cup 

Sugar 1/3 cup and 1 Tblspn 

Salt 1 Tblspn

Active dry yeast 3 1/2 tspn

Warm milk 2 cups

Shortening 1/4 cup 

Butter 4 Tblspn 

Warm water 1/2 cup  


plain breadcrumbs 1 cup- for coating 


Direction:

1.)  Add yeast into your warm water 100-110 degrees water temperature) and set aside for 5-6 minutes. 

2.) In a mixing bowl fitted with dough hook mix all dry ingredients together. Flour, Sugar, and salt.   

3.) slowly add warm milk and add in butter and shortening.   

4.) Turn the speed on medium and onead for 3-4 minutes in the mixer.   

5.) Remove from the mixer and transfer dough into the bowl sprayed with non stick or oil and warp in plastic and let the dough rise in warm place for 2 hours. 


6. ) After 2 hours fold and pull the dough up (stretching the dough up and folding it in the middle (watch my YouTube video on how to make this recipe) @Chef  Eva Kronenburg )


7.) cover the dough again and let it rise for the second time at warm place for 2-3 hours or until it doubled in size. 


8.) punch Down, shape and roll the dough. Roll into plain breadcrumbs and place in half sheet pan wrap in plastic and let it rise one last time for 1 hour 


  1. 9.) Bake at 425 degrees for 20-30 minutes. serve and enjoy. 


Suman with Mango and Coconut Caramel Sauce

Filipino Suman (Sticky Rice) with Coconut caramel sauce

Ingredients: 

Coconut caramel sauce: 

Granulated sugar 1 cup 

Coconut milk 1/2 cup 

Salt 1 tspn 

Vanilla 1 tspn 

Hot Chocolate: 

Tablea chocolate 8 pcs. 

Water 3 cups 

Brown sugar 1 cup 

Coconut milk 1/2 cup

Sticky Rice (Suman) 

Glutinous rice 3 cups soaked in water for one hour. 

Coconut milk 3 cups (2 cans) 

Water 1 cup 

Sugar 1/2 cup 

Coconut oil 1/4 cup 

Vanilla 2 tspn. 

Salt 2 tspn. 

Ginger sliced about 4 oz. 

Banana leaves 

Coconut oil - for brushing

Ingredients: 

Crust: 

Graham crumbs 229g (2 cups)

Sugar 22g (2 Tblspn) 

Butter melted 113g (1/2 cup)

Salt 5g (1 tspn)

Filling: 

Cream cheese 373g (14 oz.) 

Eggs 2 each 

Condensed milk 208g (3/4 cup) 

Sour cream 64g (1/4 cup) 

Lemon juice 12g (1 Tblspn) 

Vanilla 12g (1 Tblspn) 


Philly CheeseSteaks

Cheesesteaks 


Ingredients: 


Ribeye steak 2 lbs. sliced 

White sweet onion 1 large sliced 

Salt 

Pepper 

Provolone cheese 6 pcs. 

Cheese whiz 1 cup warm 

Hoagie roll or club roll bread 4 pcs.

Directions: 


1.) sliced ribeye into thin slice. 


2.) Cut white onion into small pieces.

3.) Sauté onion until lightly caramelized and remove from the pan. Using the same pan sauté steak until completely cook about 6 mins. As soon as the meat cook add the sautéed onion and mix well. Set aside.


4.) Cut 2 the bread in half and add 3 slices of provolone cheese And have two other bread without the provolone (Will use this for the cheese whiz later on) 


5.) preheat oven at 400 degrees and heat up the bread just until the cheese is completely melted.

6.) Remove the bread from the oven and add the steak/onion mixtures on top On the melted provolone cheese.

7.) Add cheese whiz on both sides of the other two bread and topped with steak and onion mixtures and add more cheese whiz on top.

8.) Serve while warm! Enjoy!

Ingredients: 

All purpose flour 115g (2 cups) 

Eggs 2 each 

Butter, softened 113g (1/2 cup)

Vanilla 9g (1Tblspn)

Salt 5g (1 tspn)

Cocoa powder 31g (1/4 cup)

Red food coloring 3-4 drops 

Granulated sugar 100g (1/2 cup) 

Brown sugar 144g (3/4 cup) 

Baking powder 7g (2 tspn) 

Milk 18g (2 Tblspn) 

Powdered sugar 1/2 cup for rolling the cookie dough 

Dark chocolate 1/2 cup  I used 58%  but you can use semi-sweet. This is optional

Ingredients: 


Cake: 


Eggs separate whites and yolks (5 each) 

Baking powder 9g (1Tblspn)

All purpose flour sifted 195 (1 1/2 cups)

Sugar 278g (1 1/4cup) 

Vanilla extract 13g( 1 Tblspn)

Salt 7g (1 tspn)

Milk 50g (1/4cup)


Swiss meringue: 


Egg whites 190g (6 eggs whites only) 

Sugar 1 1/2 cup

Vanilla 2 tablespoon 



Simple syrup: 


1 cup sugar

1 cup water 

Star anise 1 each 

Cloves 3-5 pcs 

Cinnamon stick 1 

Orange peel (1/2 of orange) 


Heat up sugar and water. Add star anise, cinnamon stick and orange peel. Bring to a boil and simmer on very low for 10-15 minutes. And let it cool down.
